Ingredients
- 2 cups Leftover Rotisserie Chicken
- 1/4 cup Cooked Chickpeas
- 1 Avocado
- 12 Grape Tomatoes
- 1 Cucumber medium
- ¼ Small Onion
- 5 springs Dill
- 1 Lemon
- 2 tbsp Olive Oil
- 1 pinch Salt
- 1 pinch Ground Black Pepper
Instructions
- Clean and chop avocado on a cutting board. Wash the grape tomatoes, and dill and wash and peel the cucumber. Peel and wash the onion. Chop the grape tomatoes into halves lengthwise, mince the onions and dill, and chop the cucumber.Wash the lemon, and juice it, using a lemon juicer.
- Add the chicken, avocados, chickpeas, cucumbers, tomatoes, onions and dill to the salad bowl. Add olive oil, and half of a tablespoon of the lemon juice. Gentle mix the salad, and season with salt and pepper. The salad is ready to serve.Serve with Air Fryer French Fries and Rainbow Roasted Vegetables.
