Acorn squash is one of my favorite squashes to make, because it looks cool (have you noticed, it looks like a large acorn?), and it tastes delicious. It is great simply cooked in the Instant Pot as a side dish, or you can make Baked Acorn Squash, which is also simple to make, and is yummy.
What is even tastier, though, is stuffed acorn squash. You can stuff it with lots of delicious thing, such as Italian Sausage Stuffing, Quinoa With Swiss Chard And Almonds, cooked ground beef or ground turkey.

Instant Pot Stuffed Acorn Squash

Ingredients
- 1 Acorn Squash
- ½ lb Cauliflower Rice
- ⅛ lb No sugar dried cranberries
- ⅛ lb Pecans
- 3 tbsp Olive Oil divided
- ⅛ tsp Salt
- ⅛ tsp Garlic Powder
Instructions
- Wash acorn squash. Cut acorn squash into two halves lengthwise. Scoop out all the seeds using a spoon.Add a cup of water to the
Instant Pot . Put theInstant Pot Trivet on the bottom of the Instant Pot. Arrange acorn squash halves on the trivet. Place the lid on the Instant Pot. Use the manual setting, and cook for 4 minutes. Use Natural Release, and open the Instant Pot once the pin drops. The acorn squash will be very hot, so let it cool for a few minutes. Carefully remove the acorn squash from the Instant Pot, and arrange the acorn squash halves on a plate. - Make the stuffing, while the acorn squash is cooking. Use Cauliflower Stuffing Recipe to make stuffing.
