Everyone loves chocolate cookies for Valentines Day, but these ones are even better! They are amazing sugar cookies, frosted with amazing chocolate ganache, and topped with Rainbow Sprinkles for a festive look.
I know the word ganache sounds fancy, but I love it for cooking, because it literally takes just a few minutes to make in the microwave. It could not be simpler, and it tastes amazing! In fact, I always recommend making more ganache than you need, because you will probably eat some, as you are decorating your Valentine cookies.
I came up with ganache as one of the decorating ideas for Valentine cookies, when I realized just how much sugar goes into regular sugar cookie icing. I looked at a few different recipes, and they were all using two or even three cups of powdered sugar. That is way too much sugar, and I did not want to make something that needed that much sugar.
So I started thinking of what else I can use if I wanted to have valentine cookies decorated, and chocolate seemed like a natural choice. Everyone is selling chocolate candy as Valentines Day gifts, so putting chocolate on your Valentines sugar cookies will be great. I didn’t want to make chocolate icing, so instead I made chocolate ganache. It is delicious, and the only sugar that I added to it is the sugar that is already in the chocolate chips. Ganache is delicious, very rich and chocolaty, and it goes perfectly with Valentine sugar cookies.

- 3 tbsp Unsalted Butter
- A few handfulls of Dark Chocolate Chips
- Rainbow Nonpareil Sprinkles
Instructions
- Make chocolate ganache. Cut butter into small pieces on a cutting board, and add it to the microwave safe bowl. Add chocolate chips to the bowl. Microwave on high for 30 seconds. Take the bowl out of the microwave, mix the ganache, and if needed put the bowl back in the microwave for another 15 seconds.
- Mix the ganache so that the chips and butter are completely melted and mixed together. Quickly dip the cookies into the ganache, and arrange them on a cutting board.Sprinkle the Rainbow Sprinkles on the cookies before ganache sets.
