I have always been curious about cooking with tomatillos. I have seen them at grocery stores, looked at them, but since I didn’t know what to make with them, I didn’t buy them. But I have tried salsa verde at restaurants, and when I started looking for a list of ingredients and a recipe, I found out that one of the ingredients of salsa verde are tomatillos. I finally had something I could make with tomatillos!
One interesting thing that I found out about tomatillos during my research is that they are not related to tomatoes. Because their look is similar to that of green tomatoes, I thought that tomatillos could be relatives of tomatoes. Turns out they aren’t, but rather, they are relatives of gooseberries.
Back to salsa verde. This salsa verde recipe is very simple – all you need are tomatillos, onions, cilantro, pepper flakes and a lime. I liked using roasted tomatillos and combine them with raw onions, raw cilantro, pepper flakes and lime juice. The flavor of this salsa is extremely fresh and delicious. You have a light spicy note from onions and pepper flakes, a fresh note from lime juice and the salsa is great.

Ingredients For Salsa Verde Recipe
1.5 pounds of tomatillos
1/2 of a small onion
a bunch of cilantro
1 lime
a few pepper flakes
How To Make Salsa Verde
Husk tomatillos. Wash tomatillos and cut them into quarters. Use a baking sheet to roast the tomatillos for 30-40 minutes. Once the tomatillos are roasted, cool them.
Place tomatillos, onion, cilantro, 1 tablespoon of lime juice and pepper flakes into a food process. Pulse until all of the ingredients are mixed.
This is a great salsa to serve with corn chips, to use to cook enchilads, to use in tacos.
