Here is a take on one of my favorite Indian side dishes, saag paneer. Saag means spinach and paneer is paneer cheese, it is a fresh cheese, made from cow milk. So Saag Paneer is spinach with Paneer Cheese, a tasty and flavorful dish.
In this recipe I am going to use all the Indian spices, but I am going to substitute ricotta cheese for paneer cheese. It would have never occurred for me to do so if not for an accident that happened a while ago. I was making French toast stuffed with ricotta and chocolate chips. As I was frying the French toast, some ricotta oozed out and got seared in oil on a saute pan.
When I tried the piece of seared ricotta, I loved the flavor, and it immediately reminded me of the seared paneer that I really enjoy in the saag paneer dish. So I figured I will try substituting ricotta for paneer, to see if I still like the dish. It turned out really flavorful, so I am sharing the dish with you here. Another good thing about using ricotta, is that you can find it in more grocery stores.
For a simple meal, serve this Ricotta and Spinach dish with some rice and a simple chicken or shrimp dish.

Ingredients For Ricotta and Spinach Recipes
1 pound of ricotta
1 pound of baby spinach
3 garlic cloves
1 small onion
a bit of ginger
1 cup of plain yogurt
3 scallions
Ground Cumin
Ground Coriander
Salt
Freshly Ground Black Pepper
Canola Oil
How To Make Ricotta and Spinach
Heat up oil in a saute pan. Add ricotta pieces, about the size of a tablespoon, to the oil and cook for a few minutes on each side. Take the ricotta pieces off the skillet.
Chop garlic, onions, ginger on a cutting board. Chop the scallions on a cutting board. Wash, dry and chop the spinach.
Add another tablespoon of oil to the saute pan. Add onions, garlic and ginger and saute for 5 minutes. Add spinach and saute for a few more minutes, until spinach is cooked.
Add ground cumin, ground coriander and yogurt. Add back ricotta and gently mix ricotta with the sauce.
Garnish with scallion slices and serve this ricotta and spinach dish with white rice.
