Red Quinoa: 1 Cup
Baby Carrots: 1 Pound
Red Onions: 1 Medium
Olive Oil: 2 Tablespoons
White Wine Vinegar: 1 Teaspoon
Salt: A pinch
How To Make Quinoa Salad With Roasted Carrots And Red Onions
Pre-heat the oven to 350F.
Peel the red onion, wash it and cut into quarters.
Mix baby carrots, red onions, olive oil and salt. Put the vegetables on a cookie sheet, and roast for 25 minutes, or until they are done.
Cool the vegetables. Chop the red onions in smaller pieces.
In a salad bowl combine carrots, red onions, quinoa and white wine vinegar. Mix and server.
