1.5 cups of quinoa
2 medium Tomatoes
2 medium Cucumbers
1/2 of a small Red Onion
1/4 pound of fresh Mozzarella
A handful of Basil
2 Tablespoons of Olive Oil
1 Tablespoon of Lemon Juice
Salt
Pepper
How To Make Quinoa Salad Recipe with Tomatoes And Mozzarella
Cook quinoa according to the directions on the package. Cool the quinoa.
Chop tomatoes, onions and cucumbers. Chop basil. Cut fresh mozzarella into cubes.
In a salad bowl combine quinoa, peppers, eggplants, onions, parsley and basil. Add lemon juice, olive oil and salt and pepper to taste. Mix the salad.
