1.5 cups of Quinoa
1 medium Onion
1 pound of White Mushrooms
Parsley
2 Tablespoons of Olive Oil
Salt
Freshly Ground Black Pepper
How To Make Quinoa With Mushrooms And Onions
Cook quinoa according to the directions on the package of quinoa. Cool quinoa.
Peel and wash the onion and mince the onion on a cutting board.
Wash and mince the mushrooms.
Wash and chop the parsley.
Heat up the olive oil in a saute pan. Add onions and saute for a few minutes. Add mushrooms, and cook, until the mushrooms are done.
In a bowl, combine quinoa with the mushrooms and onions mix. Add parsley. Season with salt and pepper, mix and serve with panko chicken and a salad.
