So many people have been talking about quinoa and how good it is for you. But the feedback I have heard from so many people is that plain quinoa is just not that tasty. It is just plain, and not delicious of fun to eat.

I get it, and while I am ok with plain quinoa, it just doesn’t scream “delicious” to me. What does scream delicious, though, are quinoa dishes with veggies, cheeses, or nuts added. For this recipe, Quinoa Salad With Chinese Eggplants And Scallions, I add just two additional ingredients to red quinoa. The first ingredient is sauteed Chinese eggplants (some also call them Japanese eggplants), and the other ingredient is scallions (also called green onions).
That’s it, just these two ingredients give this delicious quinoa a decidedly Asian twist, and make for an unusual quinoa salad. For a bit, I was considering adding more Asian ingredients for flavor here, such as soy sauce or sesame oil. Seriously, though, you don’t need them. Quinoa with just sauteed Chinese eggplants and scallions is pretty awesome!
Here is how to make this delicious quinoa dish. Chop the Chinese eggplant into small pieces. Saute them in batches, until they are cooked. Once the eggplant is cool, combine it with cooked quinoa and fresh scallions. That’s it! Just three ingredients to make this delicious dish!

Ingredients That You Need To Make Quinoa Salad With Chinese Eggplants And Scallions
Red Quinoa: 1 Cup
Chinese Eggplants: 3 Large Ones
Scallions: 3
Canola Oil: 3 Tablespoons
How To Make Quinoa Salad With Chinese Eggplants And Scallions
Wash the Chinese eggplants. Chop the eggplants in small pieces.
Heat up the saute pan. Add one tablespoon of canola oil and warm up the oil.
Add enough eggplants to cover the bottom of the saute pan, and let them cook for 2-3 minutes. Turn the eggplants to cook on the other side. Continue turning the eggplants every 2-3 minutes, until they are cooked.
Remove the cooked eggplants to a plate, and repeat the process with the rest of Chinese eggplant. Once all the eggplant is cooked, cool the eggplant.
Wash and clean the scallions. Chop the scallions.
In a salad bowl combine the cooled quinoa, cooled eggplants and scallions and mix.
