Ingredients You Need To Make Greek Cold Quinoa Salad with Eggplants and Peppers
1.5 cups of quinoa
1/4 pound of Feta Cheese
A handful of Parsley
A handful of Dill
2 Tablespoons of Olive Oil
1.5 Tablespoons of Red Wine Vinegar
Pepper
Roasted Red Peppers and Eggplants
How To Make Greek Cold Quinoa Salad with Eggplants and Peppers
Cook quinoa according to the directions on the package.
Chop dill, parsley, and Feta cheese on a cutting board.
Once quinoa is cool, combine it with dill, parsley, feta and Roasted Red Peppers and Eggplants in a salad bowl. Dress with oil, vinegar and pepper, mix and serve.
This is a great vegetarian dish, and you can also make it vegan by leaving out the Feta cheese.
