A lot of people have been asking about for quinoa recipes, and I find that the best thing to do with it is to make a salad. Add vegetables, herbs, a bit of olive oil and vinegar and you have yourself a great tasting quinoa salad. This recipe is all about quinoa with roasted eggplants and peppers. I suspect that if you use my recipe for Couscous Salad With Eggplants, Feta and Red Onions and use quinoa instead of couscous, it will come out great as well.

Ingredients You Need To Make Greek Cold Quinoa Salad with Eggplants and Peppers

1.5 cups of quinoa
1/4 pound of Feta Cheese
A handful of Parsley
A handful of Dill
2 Tablespoons of Olive Oil
1.5 Tablespoons of Red Wine Vinegar
Pepper

Roasted Red Peppers and Eggplants

How To Make Greek Cold Quinoa Salad with Eggplants and Peppers

Cook quinoa according to the directions on the package.

Chop dill, parsley, and Feta cheese on a cutting board.

Once quinoa is cool, combine it with dill, parsley, feta and Roasted Red Peppers and Eggplants in a salad bowl. Dress with oil, vinegar and pepper, mix and serve.

This is a great vegetarian dish, and you can also make it vegan by leaving out the Feta cheese.
