What do you think of when you think of pasta salad recipes? Do you immediately picture mayonnaise loaded pasta salads on a buffet? I have to admit, for a long time, those mayo-loaded pasta salads came to mind when I thought of pasta salad recipes. You know the pasta salad I am talking about – a macaroni pasta, broccoli, nuts, and mayonnaise. Lots and lots of mayonnaise.
But then I thought – maybe that’s not what pasta salads are all about? Maybe there are tasty pasta salads that are not a gloppy mess. Maybe there are pasta salads that are tasty? So with that in mind, I started trying making different pasta salads, and realized that yes, you can make a delicious pasta salad. You can make a pasta salad that will be delicious and will make a great side dish. For example, here is one, Greek Pasta Salad Recipe, with pasta, feta cheese, tomatoes, cucumbers, bell peppers, onions, dill, parsley and Greek Salad Dressing.
And here is another pasta salad recipe, Pasta Salad With Peanut Sauce, Carrots, Red Peppers, Scallions, with peanut butter dressing. This is a fun Asian style pasta salad with spaghetti pasta.
Pasta Salad With Eggplants And Grape Tomatoes is another pasta salad that is simple to make and is very delicious. This is a simple pasta salad that makes a great side dish. In fact, this is a great dish, if you want to make a pasta dish, but don’t want to just make a big bowl of pasta. This pasta salad is tasty, and it has a lot of vegetables to make this pasta dish good for you!
Eggplants add a really nice, earthy flavor to this dish, and the tomatoes make it colorful and add a lot of flavor. Parsley adds a bit of green color and more great flavor.
To make Pasta Salad With Eggplants And Grape Tomatoes, you will need to make fried eggplant. Once you make the eggplant, cut it into small, bite-size pieces. Cook pasta for pasta salad al dente. I use bow tie pasta (Farfalle) in this pasta salad, but you can use any other short cut pastas.
Cut grape tomatoes in halves lengthwise and chop parsley. In a salad bowl, combine pasta, fried eggplant, tomatoes. Add red wine vinegar and olive oil. Season the salad with salt and freshly ground black pepper and mix. Once the salad is done, sprinkle the salad with a bit of parsley and serve.

Ingredients For Pasta Salad Recipes With Eggplants And Grape Tomatoes
8 oz of short cut pasta, such as bow tie pasta (Farfalle)
2 Medium Eggplants
A few handfuls of Grape Tomatoes
A handful of Parsley
1 Tablespoon of Red Wine Vinegar
2 Tablespoons of Olive Oil
Salt
Freshly Ground Black Pepper
How To Make Pasta Salad Recipes With Eggplants And Grape Tomatoes
Make fried eggplants, using the Recipe for Making Fried Eggplants. Once the eggplants are cool, cut the eggplants into bite-size pieces on a cutting board.
Cook bow-tie pasta to al dente. Drain the pasta and wait for the pasta to cool.
Wash the grape tomatoes and cut them into halves lengthwise. Wash and chop parsley.
In a salad bowl combine pasta, eggplants, tomatoes. Add red wine vinegar and olive oil, season with a bit of salt and freshly ground black pepper and mix. Sprinkle the pasta salad with parsley and serve.

pasta salad has to be one of my all-time favorite dishes + i really like it in all sorts of forms. we grow our own grape tomatoes in the summer, so i always add those in to any summertime pasta salad. love the idea of incorporating eggplant, too! i need to work on a great fall pasta salad with some of autumn’s seasonal veggies. hmm, maybe that’s a future blog post? =)
