Fried Leftover Spaghetti Noodles Recipe

- 3 cups Spaghetti cooked
- 4 Eggs large
- 2 tbsp Milk
- ½ oz Parmesan grated
- 3 tbsp Olive Oil
- 1 tbsp Unsalted Butter
Instructions
- Heat up the olive oil in a saute pan. Add butter, and once the butter melts, add spaghetti. Turn and cook spaghetti for a few minutes, until they are completely warmed through.
- In a mixing bowl beat eggs and milk with a fork. Pour the egg mixture over pasta. Turn pasta with eggs a few times, until egg is completely cooked.

Most people have never heard of fried pasta. I’m 60 and we always fried it in butter the next day when I was a girl. Spaghetti is also awesome tossed in a bit of olive oil in a frying pan the next day. It tastes completely different. The noodles are thinner and have a different quality and texture – almost like a new dish.
