Ingredients for Healthy Homemade Pesto Pasta Recipe
A Bunch of Parsley
A Bunch Of Basil
1/2 Cup + 1 Tablespoon Of Pine Nuts
1/2 Cup + 1 Tablespoon Of Parmesan Cheese
3 Garlic Cloves
1/2 Cup Of Olive Oil
Salt
Freshly Ground Black Pepper
Fettuccini Pasta, but you can use pretty much any kind of pasta
How To Make Parsley and Basil Pesto
Bring water in the pasta pot to boil. Cook pasta to al dente, according to package instructions. Reserve some of the pasta water. Drain pasta in a colander.
Toast pine nuts using a skillet for a few minutes, until they become golden.
Grate Parmesan cheese.
Combine parsley, basil, 1/2 cup of pine nuts, 1/2 cup of Parmesan, garlic, olive oil, salt and pepper in a food processir. You can also use a blender, if you do not have a food processor.
Make sure to reserve one tablespoon of pine nuts and one tablespoon of Parmesan cheese for garnish. Process pesto in the food processor, until smooth.
In a large mixing bowl, combine cooked pasta and pesto. Add a bit of pasta water, if your pesto is a bit too thick. Garnish with the remaining pine nuts and Parmesan and serve the pasta with a delicious salad.
