I like lamb stews, as lamb is a very flavorful meat, and lamb stews are also very flavorful. Since lamb meat can have a bit of fat in it, it is great to make lamb stew with vegetables and beans. Vegetables and beans cooked together with lamb meat and a bit of fat really take on the flavor and become very delicious.
So if you want to make a very delicious stew, and at the same time make a stew that has vegetables, this lamb stew recipe is a great recipe to make. This lamb stew has onions, celery, carrots and beans, a great combination of meat and vegetables.
I haven’t used celery in a stew before, but I saw some stew recipes using celery, and wanted to try that. Turns out that celery is great in a stew, and it adds more flavor to the stew.
Here is a shortcut when making this lamb stew recipe – you don’t have to cook the white beans from scratch. A can of white beans is perfectly fine to use in this recipe. As you are going to cook the beans with lamb and other vegetables, you won’t really notice that the white beans were from a can.
To make this lamb stew recipe, you will also need lamb. I used a lamb shoulder cut with bones, and it was great in a stew. Another great thing about stews is that because you cook them for some time, you can use cheaper cuts of meat in a stew.
What can you serve with this lamb stew? You can serve it with mashed potatoes or mashed rutabaga. And don’t forget a vegetable or a salad, such as Garlic and Broccoli Rabe or Green Bean Salad With Red Onions, Walnuts, Parsley, Red Wine Vinaigrette.
To make this lamb stew, start by cutting lamb into pieces. Saute lamb for a few minutes, then add onions and saute for a few more minutes. Add some water to cover the meat. Reduce the heat and simmer the lamb for a 2-2.5 hours, until the lamb is cooked.
Add carrots and celery and continue simmering the stew, until the carrots are cooked. Open a can of white beans, wash them and add them to the stew. Cook for 5-10 more minutes. To serve, arrange the stew on a dinner plate and sprinkle with chopped parsley.

Ingredients For Lamb Stew Recipe With Carrots And White Beans
2 pounds of lamb meat with bones, such as lamb shoulder
1 large onion
2 large carrots
3 celery stalks
one 15-oz can of white beans (cannellini beans)
a handful of parsley
2 tablespoons of Canola Oil
salt
freshly ground black pepper
How To Make Lamb Stew Recipe With Carrots And White Beans
Cut the lamb shoulder into small pieces.
Wash, peel and chop the onions on a cutting board.
Wash, peel and chop the carrots. Wash and chop celery.
Heat up 2 tablespoons of oil in a pot. Add lamb and cook lamb for a few minutes on one side. Turn the lamb pieces and cook for a few more minutes. Add onions and cook for 5-10 more minutes, stirring occasionally.
Add some water to the stew pot to cover the meat. Reduce the fire and simmer the lamb for a 2-2.5 hours, until the lamb is cooked and is soft. Add carrots and celery and continue simmering.
Open the can of white beans and rinse the beans. Wash and chop parsley.
Once the carrots and celery are cooked, add the beans and cook for 5-10 minutes more. Add salt and pepper to taste.
Put your lamb stew on a plate, garnish with chopped parsley and serve.
I’ve never made lamb stew, but I like adding celery to my stew. I also like the addition of beans to your stew. It sounds very comforting!
I have never made a lamb stew before – we prefer mutton over lamb. But I am sure it would be as delicious using either. Perfect for autumn comforts 😀
