Half a Pound of Cauliflower Rice
1 Small Onion
1 Large Avocado
1 Lime
Tomato Salsa
Pressure Cooker Instant Pot Carnitas
2 Tablespoons of Olive Oil
Peel and wash the onion. Chop the onion on a cutting board.
Wash and juice the lime.
Wash avocado, cut into halves and remove the pit. Scoop the avocado halves out of the skin, and cut into small pieces. Sprinkle the avocado pieces with some lime juice, to prevent it from going dark.
Heat up the oil in the saute pan. Add half of the chopped onions (the other half of the onions is for the Carnitas Bowls). Saute, stirring frequently, for about 5-7 minutes, until the onion starts turning golden color. Add cauliflower rice, and saute for 3-4 minutes more, until cauliflower rice gets softer.
Put together a carnitas bowl: add a few tablespoons of cauliflower rice to a bowl. Arrange mounds of Tomato Salsa, Pressure Cooker Instant Pot Carnitas, onions and avocado on top of the cauliflower rice.
