I love making soups, because they are easy to make, and you can make them with whatever you have on hand. They are fun to experiment with, as you can’t usually go wrong with them. This is especially true for this Instapot Italian Tortellini Soup. I had a bag of spinach and cheese tortellini in my freezer for a while, and with it I also had a pack of frozen spinach. With that, I added a few other ingredients, and had an amazingly delicious soup in not time.

What do you need to make this delicious vegetarian tortellini soup? Here are the tools you will need:
– Instant Pot, my favorite cooking gadget! We use it very often to make soups, squashes, chicken and more!
– Cutting Board, you always need a cutting board, when you are cooking, and this is the one we recommend.
– Kitchen Knife, a good knife is always a necessity, you will use it for cooking every day for many years to come.

– Bag of frozen tortellini
– Bag of frozen spinach
– Onions
– Garlic
– Potatoes

What Other Ingredients Can You Use?
If you are using this Instapot tortellini soup to use up things that you have in your pantry and freezer, here are other ingredients you can use:
– Use different type of tortellini, such as sausage, meat, four cheese, veggies tortellini — any kind will be great in this soup. Just remember that if you add meat based pasta, the soup will not be vegetarian anymore.
– Add tomatoes, celery, fresh spinach, green beans, escarole, kale — probably not all of them at once 🙂 but adding a few of these to the soup will also be delicious.
– If you like your soup to have meat, add some Italian sausage or ground beef. If you are adding bulk Italian sausage, or ground beef, add it at the same time as onions, and saute to add more flavor to the soup. Everyone is going to enjoy the Italian sausage tortellini soup.
– Add chicken breast to the soup. For this, you don’t even need to defrost the chicken. Just add two frozen chicken breasts to the soup, and make sure they are covered with water, before you start cooking it in the Instant Pot. Then, once the soup is done, take the chicken breasts out, shred them, and add them back to the soup. It will be a delicious chicken tortellini soup!
How To Make Instant Pot Spinach and Tortellini Soup
Here is a very easy recipe for how to make Instant Pot tortellini soup. For the exact recipe, and timing, please see the recipe card on the bottom of this post.
– Chop onions, carrots and potatoes.
– Saute onions and carrots in the Instant Pot. Add Italian Seasoning.
– Add potatoes and continue sauteing.
– Add frozen spinach, frozen ravioli and water. Pressure cook until the soup is done.

Pro Tips For Making Soup in your Instant Pot
– This soup recipe is very versatile. You can substitute, or add other ingredients, and you will have an amazing soup as a result. Don’t be afraid to experiment with the ingredients you have on hand in your pantry.
– We love adding Italian sausage to our soups, we didn’t have it this time, so this soup turned out to be a vegetarian Instapot Spinach Tortellini Soup. It will be really delicious with bulk Italian sausage, too.
– Tomatoes would be really yummy in this soup. Just chop them up and add them at the same time as you add potatoes.
– Other green veggies will be great instead of spinach. Escarole, or kale will be great in this soup. You can even use Frozen broccoli.
– This soup uses water, but you can use stock instead. Use vegetable stock to keep the soup vegetarian, or use chicken stock.

Instapot Spinach Tortellini Soup
Equipment
Ingredients
- 12 oz Frozen Tortellini
- 12 oz Frozen Spinach
- 3 tbsp Olive Oil
- 1 Onion
- 2 Carrots
- 3 Garlic Cloves
- 3 Potatoes
- ½ tsp Italian Seasoning
- 1 oz Grated Parmesan
Instructions
- Peel onions, garlic, carrots and potatoes. Chop onions, carrots and potatoes. Mince the garlic.
- Set the
Instant Pot to Saute and add Olive oil to the Instant Pot. Once the oil is hot, add onions and carrots to it. Saute the vegetables for three minutes, then addItalian Seasoning . Saute for 3 more minutes, then add garlic and potatoes and saute for a few more minutes. - Turn off the Instant Pot. Add frozen spinach, frozen ravioli and enough water to the Instant Pot, so that it is about 2/3 full.
- Place the lid on the
Instant Pot use the manual setting, and cook for 23 minutes. Use Natural Release, and wait for the valve to drop. Carefully open the lid and mix all of the ingredients of the Instapot Spinach Tortellini Soup together.Serve with Cheesy Garlic Bread Made With Regular Bread and Beet Salad With Avocado and Fresh Mozzarella.
