It used to be that it took a long time to cook Beef Chuck Roast. This is because this is one of the tougher roasts, and if you cook it in the oven, or on a stove top, it would take hours of slow braising to get the meat tender and delicious. In fact, it would take me 4 hours or so to make a tender and delicious Pot Roast on stove top. Not only that, with cooking on the stove top, you have to constantly check on the pot roast.
All of that changed, once the Instant Pot appeared on the scene. This is because Instant Pot is perfect for exactly these tough cuts of meat.
Because of the way Instant Pot cooks, it is a perfect appliance for cooking a tough beef roast! With it, you will not have to spend 4 hours cooking the pot roast, it will be done faster. And, you do not have to check on your Instant Pot Pot Roast all the time. Just start the cooking process, and wait until the Pot Roast is ready!
There are just a few steps to cooking the Instant Pot Pot Roast, you won’t believe how simple it is! First, dry the roast on both sides. You want to do that to get rid of all the moisture on the outside of the beef chuck roast, so that it sears really well.
Next, season on both sides with salt and pepper.
Next, start your Instant Pot. Add oil, and once the oil is hot, sear your chuck roast on both sides. Searing is not 100% necessary, but it add flavor, and seals in the juices.
Then, cook manually for 90 minutes with natural release. It is so simple, and your Instant Pot Pot Roast will come out so tender and delicious!

Instant Pot Pot Roast
This Instant Pot Pot Roast Recipe is a healthy, delicious Keto Instant Pot Recipe! It takes just a few minutes to prep, and then it cooks completely on its own, and comes out delicious.
Prep Time: 10 minutes
Cook time: 95 minutes
Beef Chuck Roast, 2-3 Pounds
2 Tablespoons of Canola Oil
Kosher Salt
Freshly Ground Black Pepper
2 Cups (or more) of Water or Stock
How To Make Instant Pot Pot Roast Recipe
Dry your Beef Chuck Roast on both sides with paper towels. Season both sides of the chuck roast with Kosher salt and pepper.
Set the Instant Pot to Saute. Add the Canola Oil to the Instant Pot.
Once the oil is hot, add the Beef Chuck Roast to the Instant Pot. Sear the roast on one side for a few minutes. Turn the roast on the other side, and sear for a few more minutes.
Add water or stock to the Instant Pot. If two cups is not enough, add a bit more, you need to add enough water or stock to the Instant Pot to mostly cover the beef chuck roast.
Place the lid on the Instant Pot. Use the manual setting, and cook for 90 minutes. Use Natural Release, and wait for the valve to drop.
Once the valve drops, carefully open the lid, and remove the pot roast. Let the pot roast rest on a cutting board for 10-15 minutes.
Your delicious Instant Pot Pot Roast is ready to serve!
