We have tried a few different ways of making, and after all the taste tests have to agree that Guinness adds another dimension to this already delicious stew.
When beef and vegetables are cooked in the Instant Pot, Guinness combined with the meat, and vegetable juicers creates an amazing beef stew broth. And because of this combination, the Instant Pot Irish Beef Stew has a very rich, meaty delicious flavor.
Is Instant Pot Irish Beef Stew Healthy?
There are just a few ingredients to the Instant Pot Irish Beef Stew. The ingredients are onions, celery, carrots, potatoes, beef and Guinness. This is a pretty healthy (and very delicious!) main dish that you can serve for dinner.
Pro Tip: A lot of people have asked me if you can subsctitute something else for potatoes to make this dish even healthier. My usual go to substitutions for potatoes are sweet potatoes, cauliflower and butternut squash. However, in this case I would not go with sweet potatoes, cauliflower or butternut squash, as I don’t think they provide a similar flavor profile in the Instant Pot Irish Beef Stew with Guinness. Instead, I would use turnips, which is lower in carbs than potatoes, and will still give this Irish beef stew the correct texture of the root vegetable. How To Make Instant Pot Irish Beef Stew
Here is how to make this delicious Irish Stew. We are going to cook this dish in the Instant Pot twice. This is because it will take much longer to cook stew meat than it is to cook carrots and potatoes.
If you add beef, potatoes and carrots to the Instant Pot at once, and then cook them for 60 minutes, you will get very mushy carrots and potatoes. To avoid this, we cook beef by itself first, then add carrots and potatoes and cook them for a bit more. The result is a delicious stew, with tender beef and delicious vegetables.
To make the Irish stew, we first cook the beef and chopped onions, carrots and celery in Guinness and water. Then, once the beef is almost done, we add baby carrots and potatoes, and cook for a bit more. The result is an amazingly delicious beef stew.

Instant Pot Irish Beef Stew Recipe

- 1.5 lbs Beef Chuck Roast
- 1 Yellow Onion medium
- 1 Carrot
- 1 Celery Stalk
- ½ cup Guinness
- 1 lb Baby Carrots
- 1 lb Potatoes
- 2 tbsp Canola Oil
- 1 pinch Salt
- ⅓ tsp Parsley
Instructions
- Wash and peel the one small carrot, onion, celery. Chop the onion, carrot and celery on a cutting board.Cut the beef into bite size pieces. Dry the beef. Salt the beef.Wash and peel potatoes. Cut the potatoes into pieces.
- Set the Instant Pot to Saute. And add a tablespoon of oil to the Instant Pot.Once the oil is hot, add chopped onions, celery and carrots. Saute for a few minutes. Add the beef, and mix. Add Guinness and then add enough water to almost cover the beef.Place the lid on the Instant Pot, use the manual setting, and cook for 60 minutes. Use Natural Release, and wait for the valve to drop. Carefully open the lid.
- Add potatoes and baby carrots to the Irish Beef Stew. Place the lid on the Instant Pot, use the manual setting, and cook for 8 more minutes. Use Natural Release, and wait for the valve to drop. Carefully open the lid.Serve the Instant Pot Irish Beef Stew with Shredded Cabbage Salad for a perfect St Patricks Day dinner.
