You know when fall is here, because that’s when every store has a huge squashes display! Have you been thinking about buying acorn squashes at the store, but are just unsure on how to cook them? We can help! Once you finish reading this recipe, you will be able to make your own, delicious roasted acorn squash!

Acorn squash is a winter squash, that looks like a really large acorn, so that is why it has that name. It is usually dark green, with some orange or yellow spots. Baking it in the oven really brings out the flavor and sweetness, and it makes for a delicious side dish.
How To Bake Acorn Squash
Here is the easiest recipe for making roasted acorn squash, and the step by step instructions:
1. Wash the squash. As it is dusty, it is always recommended to wash the vegetables, before cooking them.
2. Next you will need to use a cutting board and a
knife to cut the squash length wise.
3. Scoop out the seeds. You will not need to use them in this recipe. It is very simple to scoop the seeds out with a regular metal soup spoon.
4. Then, put the squash on the cutting board, cut side down so it is easier to cut, and cut into acorn squash pieces.
4. Put olive oil on a baking sheet. Arrange squash slices on the baking sheet.
5. Brush olive oil on the acorn squash slices, and sprinkle with Zaatar. Then turn the slices, brush with a bit more oil (not too much, as some oil from the baking sheet probably got on the slices), and sprinkle with a bit more zaatar.
Side note, if you don’t have Zaatar, you can click here to buy it online. It is a mix of spices, such as thyme, cumin, coriander, sumac, sesame seeds and salt and black pepper. So if you do not have Zaatar on hand, just make a spice mix, using these spices.
6. Bake acorn squash wedges in the oven, for about 27 minutes, turning once in the middle of cooking. Once they are done, cool them for bit, and serve as a side dish with Greek Grilled Chicken and Greek Salad.
You can vary which oil you use and which spices you use to make roasted squash. Oregano, cumin and coriander are all great spices to use on it.

How To Bake Acorn Squash
Instructions
- Wash acorn squash and use a knife to
cut it lengthwise .Scoop out the seeds. Put acorn squash halves on acutting board and cut them into one inch wide slices. - Pour olive oil into a
small mixing bowl . Use the basting brush and brush olive oil on thebaking sheet .Arrange acorn squash slices on the baking sheet, and baste with olive oil and sprinkle withzaatar . Turn the slices, baste with a bit more oil and sprinkle with zaatar. - Put the baking sheet with the acorn squash slices into the oven, and roast for about 15 minutes. Take the baking sheet out, turn the slices, and put them back in the oven. Cook for 12 more minutes, or until they are done.Take them out of the oven, and cool for 10-15 minutes. They are now ready to serve!Serve with
Low Carb Cauliflower Fritters andInstant Pot Leg of Lamb .
