– Pyrex Measuring Cup, this measuring cup is a must have. You need a vessel, from which you will pour the low carb egg muffin mixture into the muffin cups. And the vessel has to have a spout, otherwise you will not be able to pour well, and you will get eggs all over.
Enter this measuring cup. You can mix the eggs and milk in it, and then use it to pour the egg mixture into the muffin pan.
– Muffin Pan, you need a muffin pan to make these cute low carb egg cups. This is a standard muffin pan, and you can use it to make 12 egg cups at once.
Cutting Board, you will need a cutting board to chop ham and spinach.

7 Eggs
3 Tablespoons of Milk
1/2 Pounds of Ham
1/2 Pounds of Baby Spinach
1/3 Pound of Cheddar Cheese
How To Make The Best Low Carb Ham and Egg Cups
Preheat the oven to 375F.
Generously spray the muffin pan with the oil spray.
In a Pyrex measuring cup beat the eggs with the milk.
Wash baby spinach. On a cutting board, chop baby spinach and ham into small pieces.
Use the grater to grate Cheddar cheese.
Add ham and baby spinach to each muffin cup in the muffin tin. Add the grated cheese on top of the ham and baby spinach.
Pour the egg mixture using the spout of the measuring cup for each muffin.
Bake the Ham and Egg Cups for 20-25 minutes, until the toothpick that you insert into an egg cup comes out clean.
Serve these delicious ham and egg cups with Low Carb Grape Tomatoes, Onions and Cucumber Salad or with Microwaved Broccoli for a low carb delicious brunch.
