Four Medium Asian Eggplants
Olive Oil
Mint
Dill
Parsley
1 Lemon
Wash the Asian Eggplants. Remove the tops, and cut them into halves, lengthwise. Brush the eggplants with olive oil.
Preheat the grill pan. Add some olive oil to the grill pan. Arrange a few eggplant halves on the grill pan. Grill for 4-5 minutes on one side. Turn the eggplants, and grill for 5 more minutes, until they are done.
Remove the eggplants to a plate, and repeat with the rest of the eggplants. Cool the eggplants.
Wash mint, dill and parsley. Remove the dill, parsley and mint leaves from the stems, and discard the stems. Chop dill, parsley and mint.
Wash the lemon, and cut it into halves crosswise. Juice the lemon.
Cut the cooled grilled eggplants into pieces.
In a salad bowl combine eggplant, mint, dill and parlsey. Dress with one teaspoon of lemon juice and mix. Taste test the Grilled Eggplant Salad with Herbs, and adjust lemon juice as needed.
