I have heard about the Green Goddess Salad Dressing for a long time, but haven’t made it until recently. Thing is, every time I have seen a Green Goddess Dressing recipe, the recipe had a lot of mayo in it. And since I prefer making healthier salad dressings, I have stayed away from it for a long time.
However, I have been seeing pictures of salads dressed with Green Goddess Dressing, and the dressing looked fabulous. The dressing looks wonderful and green, a perfect springtime dressing.
So finally I decided to make Green Goddess Dressing, but to make it lighter, I am replacing mayonnaise in the salad dressing with plain Greek yogurt. I am actually using 0% plain Greek yogurt, but you can use 2% or 4% yogurt, if that is what you have. The dressing tastes great with yogurt, it makes the dressing wonderfully creamy and delicious.
Also, many recipes I have seen use anchovies, and they mention how flavorful anchovies make this salad dressing. I am not a big fan of anchovies, but I do use anchovy paste when making Cesar Salad Dressing. So I used just a bit of anchovy paste in the Green Goddess Dressing, and it did add a nice flavor to the salad dressing.
There are just a few ingredients in this salad dressing. You will need plain yogurt, anchovy paste, red wine vinegar, scallions, parsley and dill. Scallions, parsley and dill is what I had on hand, I have seen other Green Goddess Dressing Recipes that used other green herbs, such as tarragon and basil, so if you like a different combination of green herbs, add those to your dressing.
It is very simple to make the Green Goddess Dressing. Just combine yogurt with anchovy paste and red wine vinegar, add chopped scallions, parsley and dill. Then, use a stick blender to blend the dressing together. Then try it, season with salt and freshly ground black pepper and blend a bit more.
That’s it, the Green Goddess Dressing is done. If you are wondering how to use this salad dressing, it is very versatile. Here is a simple salad recipe that uses Green Goddess Salad Dressing: Tomato Salad With Green Goddess Dressing.
Here is another salad that will be great with the Green Goddess Dressing – Grape Tomatoes, Onions and Cucumber Salad Recipe. Make the salad, and instead of dressing it with olive oil and apple cider vinegar, dress it with the Green Goddess Dressing.
