When I was doing meal planning for this menu, I wanted a Greek inspired side dish to go with the chicken. And once I settled on rice, I decided to add sauteed spinach to it, to make it healthier and tastier.
This Greek Spinach Rice is pretty simple to make. I like dishes with just a few ingredients, and this one is no exception. All you need to make this delicious side dish is onions, rice, spinach, olive oil and water.
To make this rice dish, saute onions in olive oil. Then add rice, and saute for a few more minutes. Add water, bring to boil, and then simmer until the rice is done. While the rice is simmering, saute spinach for a few minutes. Once the rice is cooked, fluff it with a fork, add the sauteed spinach, and mix.

Ingredients You Need To Make Greek Spinach Rice
Rice: 1.5 Cups
Onions: 1 Medium
Olive Oil: 2 Tablespoons
Water: 3 Cups
Baby Spinach: 1/2 Pounds
Dry Oregano: A few pinches
How To Make Greek Spinach Rice
Peel and wash the onion. Mince the onion on a cutting board.
Heat up 1 tablespoon of olive oil in the sauce pan. Add minced onions, and saute for 5-7 minutes. Add dry oregano and rice, and saute for 3-4 minutes more.
Add water and increase the heat. When water boils decrease the heat to simmer, and cook for 17 minutes.
Once the rice is done, fluff it with a fork, add the spinach and gently mix. Serve with Greek Grilled Chicken and Greek Salad.
