Many people tell me that they are always looking for more pasta salad recipes, but they can’t find any good ones. When I am looking at pasta salad recipes, I am looking for a salad loaded with vegetables (maybe some cheese, but not necessary). I am also looking for something that doesn’t use mayonnaise in the dressing, if possible. I like oil/vinegar dressings much better.
Enter Greek Pasta Salad. This is a great cold pasta salad, that has lots of fresh vegetables, some feta cheese and pasta. I do like Greek Salads – I have posted about Greek salads a few times already: Greek Salad, Greek Salad Dressing and another Greek Salad Recipe.
This easy Greek pasta salad is more than a salad – because it has pasta as well, it is a side dish. You can serve it with Spanakopita, Chicken Piccata, and many other dishes.
