How To Make Greek Chicken Sheet Pan Dinner
Making your delicious, healthy chicken breast sheet pan dinner is so simple! First, remove the cauliflower stalks from the cauliflower head, wash it and chop it into small florets.
Next, peel and wash the onion, and chop into semi circles.
Mix the vegetables with oil, lemon juice and oregano, put on a sheet pan, and start roasting.
While the veggies are roasting, prepare the chicken. Depending on the size of the chicken, cut it into halves or thirds. Make sure all the chicken pieces are of similar size.
Put the chicken into a mixing bowl, and mix with oregano, olive oil and lemon juice.
Next, take the veggies out of the oven, and add the chicken to the sheet pan as well. Return the sheet pan to the oven, and roast the chicken and veggies until they are done.
Use a meat thermometer to check the temperature of the cooked chicken. It should be at least 165F for each pieces of chicken. That’s it! Serve the delicious supper dish and enjoy!

How To Make Greek Chicken Sheet Pan Dinner
Ingredients
- 1 lb Cauliflower
- 1 Red Onion large
- 1.5 lb Chicken Breasts bonelss, skinless
- 1 tbsp Dill
- 2 Lemons
- ½ tsp Greek Oregano
- ⅛ tsp Salt
- 6 tbsp Olive Oil
Instructions
- Wash the cauliflower. Remove the stems and divide the cauliflower into small florets on a
cutting board .Peel and wash the red onion.Cut the onion into halves lengthwise, and then cut each half across into semi-circles.Wash one lemon, andjuice the lemon . Set the juice aside, and throw away the lemon.To a mixing bowl , add cauliflower florets, cut onion, 1 teaspoon of lemon juice, 3 tablespoons of Olive Oil, a pinch of Greek Oregano, a pinch of salt and mix. - Preheat the oven to 400F. On the
sheet pan arrange cauliflower florets and onions and roast for 15 minutes. - While the vegetables are roasting, prepare the chicken breasts. Dry the chicken breasts with paper towels, and cut them into smaller pieces. If the chicken breasts are small, cut them into halves. If they are large, cut them into thirds. Make sure the pieces are of the same size, so that they cook for the same amount of time.
Add to a bowl chicken breast pieces, 1 teaspoon of lemon juice, 3 tablespoons of Olive Oil, a pinchof Greek Oregano, and a pinch of salt. Mix all the ingredients together.Take thesheet pan out of the oven. Turn cauliflower and onions. Arrange chicken around the vegetables and return the sheet pan to the oven. Cook for 20-25 minutes, until<a href="meat thermometer">meat thermometer reads at least 165F for each piece of chicken. - While chicken is cooking, wash the dill. Wash the remaining lemon.
Chop the dill on a cutting board , and cut the lemon in thin slices.
