I love Cowboy Caviar and I have sampled many different versions of Cowboy Caviar at barbecues, grocery stores and picnics. However, every time I look at the ingredient list for Cowboy Caviar Dip at a store, or lookup a recipe online, there is always one thing that I do not like about it. The recipes and ingredient lists always have way too much sugar. Sometimes half a cup, sometimes a cup, sometimes even more.

Seriously, who needs a cup of sugar in a salad? That is way too much sugar to dress a delicious bean salad. The ingredients in a Texas Cowboy Caviar Recipe are already delicious, and there is no reason to add too much sugar to them. In fact, I rarely add sugar to salad dressings. I find that for many salads, just vinegar, olive oil, and salt and pepper are enough.

However, I did enjoy the note of sweetness I tasted in many Cowboy Caviar salads, so I have decided to add a bit of sugar to this recipe. You can definitely leave it out completely, but based on this salad disappearing in record time, it looked like the sweet note in the dressing was appreciated.

Because we cut down sugar in the salad dressing for this Cowboy Caviar Recipe to just one teaspoon, this Texas Caviar Salad is definitely healthy.

And this brings me to the next question — is Cowboy Caviar a salad or a dip? Because, you can eat is as a dip or as a salad. A lot of people call it a salad, and I served it as a side dish with Steak Tacos. However, I also like it as a dip, served with corn chips.

No matter how you decide to eat Cowboy Caviar, though, this is a delicious and healthy salad to make this summer! So make the salad, or serve it as dip, it will be tasty either way.

What is Cowboy Caviar Made Of?

There are many delicious ingredients in Cowboy Salsa. To make the salad, combine black eyed peas, black beans, fresh corn, red bell pepper, red onion, cilantro, dill and a delicious Cowboy Caviar Salad dressing.

The salad is pretty simple to make, and if you use canned beans, you can make it pretty fast, too. One thing about beans from a can is that you should remember to rinse them well, before adding them to a salad.

How To Make Cowboy Caviar

To make the delicious Cowboy Caviar, all you need to do is to combine in a salad bowl black eyes peas, black beans, corn, red bell peppers, red onions, cilantro and dill. Then, make a dressing with white wine vinegar, olive oil, and other ingredients.

Ingredients

  • 1 can Black Eyed Peas
  • 1 can Black Beans
  • 1 can Corn or corn from 3 cooked cobs
  • 1 Red Pepper medium pepper
  • ½ Red Onion medium onion
  • ½ Bunch of Dill medium bunch
  • ½ Bunch of Cilantro medium bunch
  • 3 tbsp Olive Oil
  • 1 tbsp White Wine Vinegar
  • 1 tsp Granulated Sugar
  • tsp Coriander ground

Instructions

  • Open the cans of corn, black beans and black eye peas. Rinse in a colander, and let dry for a bit.
    If using fresh corn, cut the corn kernels off the corn on the cob.
  • Peel, wash and chop the red onion. Wash the red bell pepper, and chop into small pieces. Wash the dill and cilantro, remove the big stems and chop on a cutting board.
  • In a salad bowl combine the beans, peas, corn, red onion and red bell pepper. Add the dressing and mix. Add dill and cilantro and mix again.
    Serve with Air Fryer Chicken and Air Fryer Acorn Squash.

    This looks great – I think it must be an American thing to add sugar to salads – I don’t ever do so other than a pinch in vinaigrette to help it emulsify! Much healthier without!

  7. I leave out cilantro & dill. I add artichoke hearts & avocado. For dressing I use evoo, lime juice & a pinch of sugar. The best part about this recipe is adding or subtracting ingredients that appeal to your taste. Can’t wait to make it again. So delicious.
