And it’s great – the salad dressing of 0% Fat Greek Yogurt and just a bit of mayonnaise is great. The salad is still very creamy and delicious, and you are introducing more yogurt into your diet. To make the Chicken Salad With Celery, Onions And Yogurt Dressing, the first thing you will need is, well, the chicken. Again, this chicken salad recipe is very versatile, so you can prepare chicken to make this salad, or you can just use leftover chicken that you have. If you have some leftover chicken breasts, or other chicken parts, just take the meat off the bones, get rid of the skin and you can use the white and black chicken meat in the salad.
For this salad, I roasted bone-in chicken breasts. The skin and the bones keep the chicken meat moist, and moist chicken meat makes a great chicken salad. Once the roasted chicken breast is done, and it cooled off, take the meat off the bones, get rid of the skin, and shred the meat.
Now, chop celery, onions and parsley. In a salad bowl combine chicken, celery, and onions. Add a bit of mayonnaise, and enough yogurt to make the salad creamy. Season with a bit of salt, freshly ground black pepper and mix to combine. Sprinkle chicken salad with parsley.

Ingredients For Chicken Salad With Celery, Onions And Yogurt Dressing
3-4 Medium Bone-in Skin-on Chicken Breasts
1 Small Onion
3 Stalks of Celery
A handful of Parsley
1 Tablespoon of Mayonnaise
3-4 Tablespoons of 0% Greek Yogurt
Salt
Freshly Ground Black Pepper
How To Make Chicken Salad With Celery, Onions And Yogurt Dressing
Roast chicken breasts until they are done.
Once they are done, and they have cooled off, take the meat off the bones and discard the skin. Shred chicken breasts.
Wash, peel and chop the onion on a cutting board.
Wash and chop celery. Wash and chop parsley.
In a salad bowl, combine chicken, onions and celery. Add mayonnaise and yogurt, season with a bit of salt and pepper and mix. If the salad is not creamy enough, add a bit more Greek yogurt. Sprinkle with parsley and serve.

This yogurt idea is great. I adore chicken salad and I live in the south where chicken salad is QUEEN! I like mine with toasted pecans, celery, tarragon, and then either grapes, dried cranberries or apples.
