It is simple to make this buckwheat salad. Cook buckwheat according to the instructions on the package. Then, cut grape tomatoes in halves and chop cucumbers, onions, dill and parsley. Combine all of the ingredients in a salad bowl, season with salt and freshly ground black pepper and dress with lemon juice and olive oil.
I am using lemon juice in this recipe, because I was trying to re-create Tabbouleh, but with buckwheat instead of bulgur. Red wine vinegar or apple cider vinegar should work fine in this dish as well. Vegetables, herbs and lemon juice with olive oil make this whole grain salad delicious and add a lot of flavor to it.
Serve this buckwheat salad with a simple roasted or grilled chicken, and a vegetable, such as steamed broccoli or sauteed Swiss chard.

Ingredients For Buckwheat Salad With Grape Tomatoes, Cucumbers, Onions, Dill, Parsley
1 cup of Buckwheat
10-15 grape Tomatoes
1 medium Cucumber
1/5 of a small Onion
A handful of Dill
A handful of Parsley
1 teaspoon of freshly squeezed Lemon Juice
1 tablespoon of Olive Oil
Salt
Freshly Ground Black Pepper
How To Make Buckwheat Salad With Grape Tomatoes, Cucumbers, Onions, Dill, Parsley
Cook the buckwheat according to the directions on the package. Cool the buckwheat.
Wash the grape tomatoes and cut them into halves on the cutting board.
Peel and wash the onion and chop the onion. Wash, peel and chop the cucumbers. Wash and chop dill and parsley.
In a salad combine buckwheat, grape tomatoes, onions, dill and parsley. Season with salt and pepper, dress with lemon juice and olive oil and mix.

I use crucked wheat in my pitas(spanakopita) to absorb the liquids from the vegetables. I have never tried it in a salad but this one looks really appetizing and all the rest of the ingredients are now in season here!
