Ingredients For Black Bean Salad
Two cups of Cooked Black Beans
1 Red Bell Pepper
4-5 Scallions
a handful of Parsley
a handful of Cilantro
a handful of Dill
Lime
Salt
Freshly Ground Black Pepper
How To Make Black Bean Salad
Open the can of cooked black beans. Put the colander, and add the black beans to it. Wash the black beans in a colander, to get rid of salt and the liquid from the can.
Wash the red bell pepper, dill, parsley and cilantro.
On a cutting board, cut the red bell pepper into halves, and remove seeds and membranes.
Chop the red bell pepper. Chop dill, parsley and cilantro.
Clean and wash scallions. On a cutting board chop the scallions.
Wash the lime. Use a juicer to get about 1 tablespoon of lime juice from the lime.
In a salad bowl, combine the black beans, red bell pepper, scallions, dill, parsley and cilantro. Dress with lime juice, add salt and black pepper to taste. Mix.
