Thanksgiving is not Thanksgiving without a stuffing recipe. And I would always make some stuffing for it. Sometimes I make a Vegan Cauliflower Rice Stuffing, and other times I really like making stuffing with sausage, apples, cranberries and bread.
And because I make stuffing often in the fall and winter, I wanted to create another type of stuffing. I wanted to make this one with meat or sausage, and I also wanted to make it gluten free and low carb. Enter this amazingly delicious stuffing. All the goodness of sausage, onions and cranberries but without the bread!
Best Keto Stuffing for Thanksgiving
But how can you make sausage stuffing without croutons? Everyone loves croutons in their stuffing, right?
Well, not so fast! I started looking at what you can add to the stuffing that is Keto, but can imitate croutons. Enter cauliflower! While I love making and using cauliflower rice, in this stuffing you want to rough chop cauliflower, so that pieces of cauliflower are used instead of croutons.
If you already have cauliflower rice on hand, you can use it instead of the cauliflower pieces as well. You will just need to use a bit less water, as you won’t need to cook cauliflower rice for as long as you need to cook cauliflower pieces.
Which Sausage To Use For Thanksgiving Recipes
A lot of people ask which sausage to use for this delicious recipe. The best one to use is bulk Italian sausage, it is my favorite one to use, and it is really delicious in many recipes, including pizzas, sauces, stews and more.
I use mild sausage, as I don’t usually cook spicy foods. If you prefer spicy, you can use spicy sausage, and it will a delicious spicy dressing instead.
Sometimes stores only sell Italian sausage that is already in casing, and don’t sell bulk sausage. If that is the case, just remove it from the casing, and you will have bulk sausage to use.
If you can’t find Italian sausage, use pork sausage or breakfast sausage, and add extra Italian Seasoning for more flavor.
How To Use Italian Seasoning In This Recipe
We love, love, love to use Italian Seasoning, in both this recipe, and in cooking in general. It contains Dry Oregano, Dry Rosemary, Dry Basil and Dry Thyme, and it is very simple to make.
To use it in this recipe, just add it in after adding cauliflower to the sausage. It will add additional flavor to the dish, and will taste amazing!

How To Make Best Italian Sausage Stuffing Recipe
Here is how to make this sausage dressing. First, peel, chop and saute the onions. Saute them until they soften up and become a bit smaller, and slightly darker in color.
Next, add bulk sausage to the skillet and break it apart into smaller pieces, as you are cooking it. If you could only find sausage in casing, take it out out of the casings, before adding it to the skillet.
Once the sausage is mostly cooked you, add chopped cauliflower to the skillet. Make sure to chop it into bite sized pieces, before adding it to the saute pan.
Mix the cauliflower in with the onions and sausage. Next, add delicious Italian Seasoning to the pan.
Next, add a bit of water and continue cooking, so that the sausage is getting cooked through, and the cauliflower is getting softer.
Add cranberries, and continue cooking until sausage is cooked, cauliflower is soft but still a bit chewy, and cranberries pop and soften. That’s it, your amazingly delicious Thanksgiving side dish is ready to be served.

Best Italian Sausage Stuffing Recipe
Ingredients
- 1 Onion
- 2 tbsp Olive Oil
- 1 lb Italian Sausage bulk
- ½ lb Cauliflower
- 1 tsp Italian Seasoning
- ⅓ cup Water
- 1 oz Fresh Cranberries
Instructions
- Peel and wash the onion. Chop the onion on the
cutting board into small pieces. Wash the cauliflower andchop the cauliflower into small pieces. - Heat up olive oil in a
saute pan . Add onions, and saute for about 3-5 minutes, until it becomes soft and almost translucent. Add the bulk Italian sausage to the skillet, and saute, while breaking it apart. When sausage is about three quarters cooked, add cauliflower to the saute pan and mix. AddItalian seasoning to the stuffing, and mix again.Add water to the saute pan, and cook the stuffing for 3 more minutes. Add the cranberries to the pan and cook everything until sausage is completed cooked, and cauliflower softens up.
