  • Wash and peel the carrot, onion and celery. Chop the onion, carrot and celery on a cutting board.
    Cut the chuck roast into small pieces. Dry the beef with paper towels. Salt and pepper the beef.
  • Set the Instant Pot to Saute and add a tablespoon of oil to the Instant Pot.
    After a few minutes, once the oil is hot, add some of the beef pieces to the Instant Pot. Do not crowd the beef. Saute the beef on for a few minutes, then turn and saute for a few more minutes. Take the beef out. Add more oil to the Instant Pot, and repeat the process, until you have sauteed all the beef.
  • Add another tablespoon of oil to the Instant Pot. Add onions, carrots and celery and saute for a few minutes. Add the beef back to the Instant Pot. Add enough water to almost cover the beef.
    Place the lid on the Instant Pot, use the manual setting, and cook for 55 minutes. Use Natural Release, and wait for the valve to drop. Carefully open the lid.
    Serve the Best Instant Pot Beef Stew with Cauliflower Fritters and Cucumber Tomato Salad.
