1 cup of Barley
3 Plum Tomatoes
3 Scallions (white and green parts)
Salt
Freshly ground black pepper
1 Tablespoon of Olive Oil
1/2 Tablespoon of Apple Cider Vinegar
How To Make Barley Salad Recipe With Tomatoes And Scallions
Cook barley according to the instructions on the package. Cool barley.
Wash and chop the tomatoes on a cutting board. Clean, wash and chop the scallions.
Combine barley, tomatoes and scallions. Season with a bit of salt and black pepper. Dress with apple cider vinegar and olive oil and mix.
