Ingredients For Couscous Salad With Chickpeas, Parsley and Scallions
1.5 cups of uncooked Couscous
1 cup of cooked Chickpeas
a handful of parsley
3 scallions
1 tablespoon of Lemon Juice
2 tablespoons of Olive Oil
Salt
Pepper
How To Make Couscous Salad With Chickpeas, Parsley and Scallions
Cook the couscous according to the directions on the package. Cool couscous.
Chop parsley and scallions.
In a salad bowl combine couscous, chickpeas, parsley, and scallions. Dress with lemon juice and olive oil, add salt and pepper to taste and mix.
This couscous salad is great. The only change I made was adding some halved grape tomatoes. Very good and not too many calories. Thanks for sharing it!
