It involves first boiling the broccoli rabe, then sauteing the broccoli rabe in a bit of olive oil, and then finishing the dish with a bit more olive oil. I found that this finishing olive oil touch makes a HUGE difference – it adds a lot of flavor to the dish.

Another thing that you should keep in mind when cooking with broccoli rabe is that it is a bitter green. And this is why I am boiling it first, before sauteing it. When you boil it, some of the bitterness goes away. And the longer you boil it, the less bitter it becomes. You can control how bitter you want the broccoli rabe to be by controlling how long you boil it for.
This sauteed broccoli rabe with garlic is a fabulous vegetable side dish. You can serve this broccoli rabe as a side dish for pasta dishes, such as Pasta with Parsley and Basil Pesto Recipe, Fried Spaghetti, Pasta With Italian Sausage and Broccoli or Pasta With Mushrooms, Caramelized Onions and Pancetta.

Ingredients For Garlic and Broccoli Rabe Recipe
Broccoli Rabe: 1 Pound
Garlic: 3 Cloves
Olive Oil: 2 Tablespoons
Extra Virgin Olive Oil: 1 Tablespoon
How To Make Garlic and Broccoli Rabe
In a large pot bring water to a boil and add broccoli rabe. Cook for 8-12 minutes, depending on how strong you want the bitter flavor to be. The longer you cook, the less flavor you will have.
Once the broccoli rabe finished boiling, strain it and let it cool.
Peel and chop the garlic. Heat up two tablespoons of olive oil in a saute pan. Add broccoli rabe and saute for 2-3 minutes. Add the garlic and saute for 2 minutes.
Put the broccoli rabe with garlic on a plate, drizzle one tablespoon of the extra virgin olive oil on top and serve.
