And let’s talk about Panzanella. It is one of my favorite salads, ever! Are wondering about what is Panzanella? It is a delicious Tuscan salad, made with old, stale bread. Yes, you heard it right, this is a salad centered around old, stale bread.
But, the tomatoes and salad dressing transform the stale bread into “wow”. The old bread soaks in the salad dressing and the juice from tomatoes, and becomes extremely delicious.

Panzanella Salad For Spring
For this Panzanella Salad With Asparagus I made a few changes to the original classic recipe. First, I added steamed green asparagus. Young fresh asparagus screams spring to me, so I really wanted to use it in this recipe. Roasted asparagus would also be delicious in this recipe, for example Roasted Purple Asparagus.
I also added both yellow and red tomatoes. I love making healthy foods more appealing — if it looks good, you are much more likely to eat it. And the two different types of tomatoes make this salad look great.
I also added parsley instead of basil. Parsley goes great with the rest of the ingredients, but if you would prefer to add basil instead, you can definitely do that. You can add both parsley and basil as well, in fact, I love adding many different herbs to salad, just like in the Grilled Eggplant Salad With Herbs.
And the croutons — I made them our of multi grain bread, instead of white bread. I like using whole grains in cooking, as we all can use more whole grains in our diets.
And the best part — making this delicious Tuscan Panzanella salad is ridiculously easy. It is so easy, that once you make it, you will say to yourself: “What took me so long to make a Panzanella salad?”
How To Make Spring Panzanella Salad
To make this yummy side dish, here is what you will need to do. First, make make multi grain homemade croutons. Or you can always use any crusty stale bread.
Steam the asparagus, cool it and chop. Chop tomatoes, parsley, onions and cucumbers. Then, combine all the ingredients in a salad bowl, and dress with olive oil and vinegar and mix. That’s it — the salad is that simple to make!

- 8 oz Asparagus steamed
- 8 oz Red and Yellow Grape Tomatoes
- ¼ Onion small
- 2 oz Multi Grain Croutons
- 2 Cucumbers
- 4 springs Parsley
- 4 tbsp Olive Oil
- 2 tbsp Red Wine Vinegar
- 1 pinch Salt
Instructions
- Wash tomatoes, cucumbers and parsley. Peel and wash the onion.Chop tomatoes, cucumbers, parsley and onions.
- In a salad bowl combine onions, cucumbers, tomatoes, asparagus, croutons and parsley. Dress and olive oil, red wine vinegar, salt and pepper, and toss.Serve with Greek Chicken Sheet Pan Dinner.
