One cool thing that you can do with this appetizer is make fun striped cucumber slices. To do that, you will need a vegetable peeler. Just peel stripes on the cucumber to do that! If you don’t have a peeler, click for a vegetable peeler that I recommend.

This salmon cucumber appetizer is a great Keto appetizer to serve during a weekend dinner with your family or a fun dinner with friends. This is also a great Thanksgiving dinner appetizer or Christmas appetizer. It is also great to serve for a low carb brunch, if you want to serve something delicious and elegant before the main course.

The idea for making this Low Carb Smoked Salmon Cucumber Appetizer came to me from the very popular bagel, cream cheese and smoked salmon combination. But one day I was thinking — how can i make this combination into a Keto dish? How can I use it to make a low carb appetizer, instead of making it the main brunch dish?

Since cucumbers go so well with smoked salmon, the idea just came to me — how about replacing bagels with cucumbers? I did a test run with these, and everyone at brunch loved them. And then I made them again and again.

And, since we removed the bagel, this appetizer is now low carb, keto, and gluten free, so you can serve it to those with various dietary restrictions.

How To Make Smoked Salmon Cucumber Appetizer

Here is how to make these yummy smoked salmon canapes with cucumber.

1. Start with an English cucumber or a few medium sized cucumbers. Peel them in stripes, so that there is a stripe of cucumber skin, and then a stripe without the skin.

2. Cut cucumbers into rounds.

3. Spread cream cheese on the cucumer rounds.

4. Layer smoked salmon on top of the cream cheese. And then sprinkle it with scallions for additional green color.

Seriously, that’s it. To make more of a statement, serve these yummy bites on a cutting board, instead of a plate.

Ingredients

  • 1 Cucumber or 2 small ones
  • 3 tbsp Cream Cheese
  • 4 oz Smoked Salmon
  • 1 Scallion

Instructions

  • Wash the cucumbers. Clean and wash the scallion. Chop the scallions.
  • Use a peeler to peel the cucumber in stripes, so that you will have a light green stripe and a dark green stripe on the cucumber.
    Cut the cucumbers into round slices. Put cream cheese on each cucumber slice, and top with a few slices of smoked salmon.
  • Arrange the cucumber salmon bites on a cutting board. Sprinkle with chopped scallions. This is a great appetizer for your Friendsgiving Menu, New Year's Eve or Valentines Day.
