What do you need to make this easy Instantpot cheesecake? You will need just a few items:
– Food Processor, for making both the cheesecake crust and the cheesecake batter. Many recipes I have see use a food processor to make the crust, and then a mixer to mix cheesecake. I tried both methods, and I like using the food processor much better. It mixes the ingredients together faster and better, and the cheese cake comes out amazingly airy and not heavy. – Fat Daddio Cheesecake Pan, you would not be able to make a cheesecake without a pan with a removable bottom. When you bake cheesecake in the oven, you need to submerge it in a water bath as it cooks, so that the cooking environment is moist.
The great thing about Instant Pot is that since you need some water inside the Instant Pot for it to work, the cooking environment inside it is already moist. As you will need to add water to the Instant Pot, in order for it to work, you don’t need to do anything special in order to make a perfect cheesecake.
Should You Cover Cheesecake When Cooking It?
Here is another thing that this recipe does differently from many other recipes for cheesecake I have seen. Many recipes call for covering the top of the cheesecake pan with foil.
I don’t like that idea — as we want the cake to cook in a moist environment, when we cover the top, we don’t let moisture get to the cheesecake.
Don’t cover it. Because you don’t cover it, there will be a bit of condensation on top of your Instant Pot cheese cake, when you open the cheesecake. Once it cools off, just use a small spoon and carefully remove the water.

Why do you not need a mixer? Food Processor makes is really simple to make cheesecake! It mixes the ingredients really well, and it creates a really nice cheesecake batter.
Plus, who wants to wash an extra appliance? You already need the Food Processor to make cheesecake, so you might as well use it to make the cheese cake itself, too!
How To Make Best Instant Pot Cheesecake Recipe
Here is how to make this easy Instant Pot Cheesecake. For the measurements and instructions, scroll down to the recipe card.
Prepare the cheesecake pan: Cut out a circle out of parchment paper, that is the same size as the bottom of the cheesecake pan. Butter the cheese cake pan. Put the parchment paper circle on the bottom of the pan, and butter it as well.
Prepare the crust: In a food processor, combine graham crackers and melted butter to make cheesecake crust. Place all of the crust in the cheesecake pan, spread it evenly so that it covers the bottom of the pan and press it down with a spoon.
Prepare the cheesecake: Wipe down the food processor with a paper towel. Make cheesecake out of cream cheese, sugar, cream, sour cream and eggs. Pour the cheesecake batter on top of the crust, and cook in the Instant Pot.

- ½ cup Granulated Sugar
- 16 oz Cream Cheese
- ¼ cup Heavy Cream
- ¼ cup Sour Cream
- 2 Eggs
- 2 cups Water

- About 20 minutes before you start making the cake, take the cream cheese and eggs out of the refrigerator and place them on the counter.Melt 4 tablespoons of butter.Trace the bottom of the
cheesecake pan onparchment paper and cut it out. Use the remaining one tablespoon of butter for butterning of the the cheese cake pan. Put theparchment paper circle on the bottom of the pan, and butter it as well.Process graham crackers to crumbles in thefood processor . Add melted butter and process for another munute.Put the crumbles on the bottom of thecheesecake pan . Spread evenly across the bottom, and press down with the back side of a soup spoon. Wrap the bottom of the cake pan in foil. - Wipe the
food processor with a paper towel. Add cream cheese and sugar and process for a few minutes, until the are combined.Add eggs, cream and sour cream, and process for a minute or two, until they are just combined. - Pour the cream cheese mixture on top of the crust.Pour water in the
