Half a Pound of Cauliflower Rice
1 Small Onion
2 Eggs
1 Tablespoon of Soy Sauce
2 Scallions
3 Tablespoons of Canola Oil
Peel and wash the onion. Chop the onion on a cutting board. Clean, wash and chop the scallions.
Whisk the eggs in a mixing bowl.
Heat up one tablespoon of oil in the saute pan. Add eggs, and cook until they are done. Remove the eggs to a plate. Once eggs are cool, cut them into small pieces.
Heat up the remaining two tablespoons of canola oil in the saute pan. Add the chopped onions. Saute, stirring frequently, for about 6-8 minutes, until the onion starts turning golden brown color.
Once the onion is caramelized, add cauliflower rice and soy sauce, and saute for 3-4 minutes more, until cauliflower rice gets softer. Add the cooked eggs, and saute for another minute.
Turn off the heat, and sprinkle Cauliflower Fried Rice with scallions. Serve with Pressure Cooker Instant Pot Carnitas and Broccoli Stir Fry With Pepper Flakes.
