3 Medium Eggplants
3 Red Bell Peppers
4 Plum Tomatoes
1 Medium Onion
3 Cloves of Garlic
3 Tablespoons of Olive Oil
A pinch of Herbs de Provence
Kosher Salt
Freshly Ground Black Pepper
Water (as needed)
2 Scallions (optional)
How To Make Low Carb Instant Pot Ratatouille
Wash and dry eggplants, red bell peppers, tomatoes, scallions. Peel and wash the onion, peel the garlic.
Peel the eggplants, clean the peppers. Chop the eggplants, peppers and tomatoes. Mince scallions, onions and garlic.
Set the Instant Pot Pressure Cooker to Saute. Add the olive oil to the Instant Pot.
Once the oil is hot, add minced onions and garlic to the Instant Pot. Saute for a few minutes, stirring a few times. Add half of the eggplant to the Instant Pot. Saute for 3-5 minutes, stirring every few minutes. Once the volume of the eggplant decreases, add the red of the eggplant. Saute for 5 more minutes, stirring every few minutes.
Add tomatoes, peppers, Herbs de Provance, to the Instant Pot Pressure Cooker. Mix everything together. The eggplants and tomatoes should add a lot of water to the pot, so see how much water you need to add. In our testing, we didn’t need to add much water, but you may need to add enough water to bring the liquid to about a cup, as this depends on your eggplants and tomatoes.
Place the lid on the Instant Pot. Use the manual setting, and cook for 15 minutes. Use Natural Release, and wait for the valve to drop.
Once the valve drops, carefully open the lid. Let the Low Carb Instant Pot Ratatouille cool a bit. There may be a bit too much liquid in it, from eggplants, peppers and tomatoes. If that is the case, strain it to reduce the amount of liquid.
