Spaghetti and Meatballs is one of my favorite winter (or, actually, anytime) comfort foods. But more and more, I have been hearing from people who are looking for a lightened up version of this comfort food classic. Many readers have been looking for a lightened up, low carb version of my delicious Italian meatballs.
How To Cook Italian Meatball Salad
I started thinking about what you can do to lighten up this delicious Italian meatball dish. Everyone loves Italian meatballs, right? So where else can we use them? And then this idea came to me. To lighten up the famous Italian Spaghetti and Meatballs, why don’t we get rid of spaghetti altogether? Sounds counter-intuitive, right? But serving the meatballs without spaghetti will keep all the delicious meatball flavor in the dish, while making it much lighter.
However, you can’t just serve the meatballs by themselves, something would be missing. They really need to have a delicious background, on which they are served.
Enter the simple salad of mixed greens, cherry tomatoes and red onions, dressed very simply with lemon juice and olive oil. This simple salad is a fabulous background for the meat balls, and it works so well when the meatballs are served with them. And this is how Italian Meatball Salad Recipe came about.

How To Make Low Carb Italian Meatball Salad

For The Meatballs
2 Pounds of Ground Beef (use Ground Chuck for great flavor)
1 Small Onion
Salt
Freshly Ground Black Pepper
Canola Oil
For The Salad
Mixed Greens
Cherry Tomatoes
Quarter of a Small Red Onion
One Lemon
2 Tablespoons of Extra Virgin Olive Oil
Make the meatballs. Pre-heat the over to 375F.
Peel, wash and grate the onion.
Combine ground beef and grated onions in the mixing bowl. Season the beef mixture with salt and
pepper, and mix.
Lightly oil the cookie sheets. Make the beef meatballs, they should be about the size of a large walnut. Arrange the meatballs on the cookie sheets. Bake the beef meatballs for 25-35 minutes, until they are done.
Remove the cookie sheets from the oven, and let the meatballs cool for a bit.
In the meantime, make the salad. Wash the lemon and juice the lemon, to get some lemon juice for the salad dressing.
Wash the mixed greens and cherry tomatoes. Peel and wash the red onions. Cut the cheery tomatoes into halves on a cutting board. Cut the onion into thin pieces.
In a salad bowl, combine mixed greens, cut cherry tomatoes and thinly sliced red onions. Dress with 1/2 tablespoon of lemon juice and the Extra Virgin Olive Oil. Mix the salad.
On a platter, arrange the salad, and then arrange some meatballs on top of the salad and serve.
